How To Make This Moi-Moi Roll-Up




Instagram food blogger @9jafoodie  and author of  Lose it Nigerian  (LIN) books and plans shared a step by step guide on how to make this exciting Moi-Moi recipe she called “Moi-Moi Roll up” in a video she shared on her Instagram page.

In the video, she took her followers through the process of making the moi-moi starting from blending the beans with pepper to mixing the ingredients and pouring the mix in the oven, all through to when the moi-moi was done and ready to be eaten.


Below is the recipe she shared:


Recipe for “Moi-Moi Roll Up”

1. Measure 2 cups of beans and wash in water until all the skin has been peeled off. 

2. Pour the washed beans into the blender

3. Add 1 onion

4. Add 2 red bell peppers (Tatashe)

5. Add 1 cup of water

6. Blend all together to get a smooth paste/ texture

7. Pour the blended mix in a bowl

8. Break 2 eggs in the mix (Optional)

9. 2 tbl spoon of oil (Palm oil)

10. Add 2 Maggi cubes

11. Add salt to taste and mix thoroughly

12. Place baking paper in the oven pan and grease it with oil

13. Pour the mix in the pan and spread to cover all areas

14. Sprinkle chopped/diced red and green bell peppers

15. Sprinkle diced egg (white and egg yolk)

16. Place in the oven – 350F for 20minutes

17. Bring out from the oven and leave it to cool  

18.   From one end of the pan, hold the tip of the baking paper and use  it to roll the moi- moi to the other end of             the pan.

19. And voila………………….Slice to eat.
